Ultra-processed foods are everywhere, including many packaged snacks, sugary beverages, instant noodles, processed meats, sweet breakfast cereals, ready-made meals, and foods made with ingredients rarely used in home cooking. These convenience items are often inexpensive and have a long shelf life. Because they’re so common, many people consume them daily without giving much thought to how they might impact long-term health.

Scientists have become increasingly interested in ultra-processed foods because numerous studies link high consumption with obesity, type 2 diabetes, heart disease, certain cancers, and an increased risk of early death. However, the reasons behind these health concerns aren’t fully understood. A recent international study offers a significant clue by examining what happens inside the body after individuals regularly consume more of these foods.

Led by Dr. Jessica Blanco-Lopez from the International Agency for Research on Cancer, part of the World Health Organization, the study’s findings were published in Critical Reviews in Food Science and Nutrition. Researchers analyzed data from 15,200 adults participating in the European Prospective Investigation into Cancer and Nutrition (EPIC study).

The team initially gathered detailed dietary information from participants and categorized foods based on how much industrial processing they had undergone using the NOVA classification system. Fresh fruits, vegetables, milk, eggs, and grains are considered minimally processed, while foods containing numerous industrial ingredients, additives, preservatives, flavors, and colors fall into the ultra-processed category.

Blood samples were also collected, not just to measure cholesterol or blood sugar but to analyze hundreds of tiny chemicals called metabolites. These metabolites are byproducts of digestion, energy production, cell repair, and other vital processes. Measuring them helps scientists understand how the body responds to different eating habits.

After thorough analysis, considering factors such as age and lifestyle, researchers found that individuals who consumed more ultra-processed foods displayed a unique pattern of blood metabolites. Specifically, 22 different metabolites were associated with higher intake, many indicating increased metabolic stress and less effective fat management.

The study also identified changes in eight types of fatty acids. Some fatty acids that are typically beneficial for maintaining healthy cell membranes were found in lower levels, while others linked to saturated fats and metabolic alterations were elevated. These findings suggest that ultra-processed foods may influence the body’s fat production and processing, rather than merely reflecting the fats present in the diet. Essentially, foods high in refined carbs and industrial ingredients might prompt the body to produce excess fats internally.

Although these results don’t prove that ultra-processed foods directly cause health problems—since the study only captured data at a single point in time—they do reveal a clear association. The consistency of results across different analytical methods boosts confidence in the findings.

Overall, the evidence underscores that diets primarily consisting of fresh, minimally processed foods are likely healthier than those dominated by ultra-processed products. To better understand how these blood changes may contribute to disease, long-term studies are needed.

For now, these findings support recommendations to reduce consumption of ultra-processed foods and opt for fruits, vegetables, whole grains, beans, nuts, fish, and other less processed options whenever possible. Although more research is required, the current evidence shows that ultra-processed foods induce measurable biological changes, making it prudent to limit their intake for better health.

Long-term studies tracking individuals over years will be crucial to determine if these metabolic alterations are early indicators of chronic illnesses. Meanwhile, if health is a priority, consider exploring how vitamin D may help reduce inflammation and how vitamin K could potentially decrease your risk of heart disease by a third.

Additional recent studies highlight new methods to combat excessive inflammation and identify foods that trigger inflammatory responses. This ongoing research will help refine dietary recommendations to promote better health and prevent chronic disease.
